Coquetes fregides

Recipe for coquetes fregides


Ingredients for 15 coquetes:  

  • 250 ml water. 
  • 500 g flour.
  • 25 g fresh yeast.
  • Salt.
  • 125 ml olive oil.
  • Frying oil, such as sunflower.

Instructions (aprox. 2 hours) 

  • Temper the water, mix it with the fresh yeast and add the olive oil. Stir.
  • Mix the flour with the salt and knead adding the wet ingredients until the dough doesn't stick on your hands.
  • Leave the dough covered with a cloth until it grows and doubles its volume (aprox. 1 hour).
  • With your hands soaked in oil, make small balls of dough and flatten them in order to give them the traditional coquetes' shape.
  • When the frying oil is hot, fry the coquetes one by one, making a hole in the middle so they don't shrink and lose their shape.
  • Leave on a dish covered with kitchen paper to remove any excess of oil.
  • Serve them with sugar, salt or any kind of product such as cold cuts.
